SWISS STEAK WITH RICE 
1/4 c. flour
2 tsp. salt
2 tsp. paprika
1/2 tsp. pepper
1 lb. round steak, cut into pieces
1 clove garlic, cut in half
2 large onions, sliced
1/3 c. shortening
1/2 c. uncooked rice
2 c. canned tomatoes
2 c. hot water

Mix flour with salt, paprika and pepper. Rub steak with garlic and roll in seasoned flour. Brown onions slightly in melted shortening. Remove onions and sear the meat on both sides and put into a greased casserole.

Place onions, rice and tomatoes on top of meat. Add any leftover flour to the drippings in skillet and blend until smooth. Add hot water and cook until smooth. Pour over meat in casserole. Cook covered 1 1/2 hours at 350°F or until meat is tender.
