SWISS STEAK 
1 1/2 lb. cubed steak, cut into 2 to 3-inch squares
1/2 c. flour
1/2 tsp. salt
1/8 tsp. pepper
1 small onion, chopped
2 tbsp. vegetable oil
1/4 c. chopped bell pepper
1 c. stewed or canned tomatoes, slightly chopped up
1 c. boiling water

Salt and pepper the meat. Cook in flour. Brown onions in oil. Add steak and brown. Pour off any excess oil. Add green pepper, tomatoes and boiling water. Reduce heat to low. Cover and cook for 1 1/2 to 2 hours, stirring occasionally. Add more water (or tomato juice) if needed. Recipe produces its own delicious, medium thick gravy.
