SOUTH OF THE BORDER EGGPLANT | |
1-1 1/2 lb. ground beef 1 med. eggplant, cubed 1/2 c. green pepper 1/2 c. onion 1 garlic cube or 1/4 tsp. dried minced garlic 4 slices bacon, cut up 16 oz. jar tomato sauce or spaghetti sauce 2 c. grated mozzarella cheese In large pan, brown onion, pepper, garlic, bacon and meat (season to taste with pepper, salt). Add eggplant and tomato sauce. Cook until eggplant is tender. Sprinkle mozzarella cheese on top and cook until melted. I mix mozzarella with all ingredients and sprinkle on top too! |
