RECIPE COLLECTION
“SALMON FOIL PACKET” IS IN:
NEXT RECIPE:  SEA FOOD CHOWDER

SALMON FOIL PACKET 
1 or 2 lbs. Salmon (2 or 4 packets or servings)
heavy duty aluminum foil
For each packet:
2 cloves garlic
1/8 tsp. (pinch) garlic powder
1/2 medium onion, sliced
1/4 tsp. basil
1/2 tsp. freshly squeezed lemon juice
1/4 tsp. hot pepper flakes
1 tsp. fresh parsley (optional)
baby spinach
1 tsp. or pat of butter
1/2 tsp. olive oil

Season 1/2 lb piece of salmon, and place on a 12 inch square foil. Add seasonings, onion, garlic, lemon, butter and oil; top with spinach. Bring foil up to enclose and wrap tightly. Repeat for each foil packet (1/2 lb fish each packet or serving).

Broil or bake in a preheated 425°F oven for about 10 minutes. Also great prepared outdoors on the grill.

Serve with steamed rice, green beans or your favorite vegetable side.
