PUMPKIN BREAD | |
3 c. sugar 4 eggs 2 c. prepared pumpkin (fresh makes it taste even better) 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 c. salad oil 2/3 c. water 3 1/2 c. flour 2 tsp. baking soda 1 tsp. baking powder 1 c. chopped nuts Sift together flour, soda, and baking powder. Combine all ingredients, except nuts. Beat until smooth. Fold in the nuts. Fill bread pans, floured, 1/2 to 2/3 full. Can use floured coffee cans. Bake at 350 degrees for 1 hour and 15 minutes. Test with toothpick for doneness. Let stand 20 minutes before removing from pans. Can be frozen. |
