HAM IT UP WITH POTATOES 
8 lg. red skinned potatoes
8 tbsp. butter
1 egg, beaten
Salt and pepper, to taste
2/3 c. milk
1/2 c. Parmesan cheese
1/2 lb. boiled or baked ham, sliced
1 lb. shredded Mozzarella cheese
Bread crumbs

Boil potatoes with skins on until tender, drain and peel while hot. Mash through potato ricer into large bowl. Add butter, egg, salt, pepper, milk and Parmesan cheese. Blend at medium with electric mixer until they become the consistency of mashed potatoes. Spread potato layer in lightly greased 2 quart deep casserole dish. Layer with part of ham and cheese.

Repeat the process ending with potato layer on top. Dot with butter. Sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes.

Serves 6.
