EASY PUMPKIN BREAD 
1 c. pumpkin (canned or cooked fresh)
4 eggs
2 c. sugar
1 c. cooking oil

Mix together. Add:

2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Mix together.

Divide into 3 greased loaf pans. Sprinkle with sliced almonds. Bake at 350 degrees for 45 minutes or until middle of loaf springs back when touched.

I added 3 teaspoons of pumpkin pie spice and 1 teaspoon of cinnamon then 1/4 teaspoon of nutmeg because I like mine spicy.

I was looking for an easy recipe for pumpkin bread and this was perfect. I modified it only by substituting 2/3 c of the flour with whole wheat flour and I added about half a cup of chopped walnuts. I made one large loaf, one small loaf and 10 muffins. It was moist and delicious! Excellent!

Really easy and delicious. I made mine a little differently - instead of 3 loaf pans, I baked it in a 9x12 glass dish and cooked it a little longer than 45 min. The top came out wonderfully crunchy while the inside was still moist.

Will definitely be making this again!
