APPLE RAISIN BREAD 
1 c. white flour
1 tsp. baking soda
1 tsp. baking powder
1/2 c. sugar
3/4 c. whole wheat flour
3/4 c. toasted wheat germ
1 tsp. cinnamon
1/2 tsp. allspice
2 egg whites
1/2 c. water
12 oz. can frozen unsweetened apple juice concentrate, defrosted
1 1/2 c. apple, peeled, seeded, cored & chopped
1/2 c. raisins, plumped in 1 c. water for 5 min. & drained

Preheat oven to 350 degrees. Spray an 8"x5"x3" loaf pan with vegetable oil. In large bowl, sift together white flour, baking soda, baking powder and sugar. Add whole wheat flour, wheat germ, cinnamon and allspice and set aside.

In a separate bowl, mix egg whites, water and apple juice concentrate. Add flour mixture and combine well. Add apple and raisins. Pour into pan (it will be full).

Bake at preset temperature for 50 to 60 minutes or until toothpick inserted in middle comes out clean. Makes 1 loaf.
