1 c. butter 1 c. smooth peanut butter 1 (1 lb.) box sifted confectioner's sugar 1 (6 oz.) pkg. semi-sweet choc. or butterscotch chips In a 3-quart micro-safe bowl, combine butter and peanut butter. Microwave on high 2 to 3 minutes or until butter melts. Add sugar, mix until smooth. Roll into 1-inch balls. Place on waxed paper lined baking sheet. Let stand at room temperature 2 to 3 hours or until firm. Place chocolate chips in a 1-quart glass measure. Microwave on HIGH 1-1/2 to 3 minutes or until chips melt, stirring every minute until shiny and smooth. Use a metal skewer to dip balls 3/4 of the way into chocolate. Place on a waxed paper lined baking sheet. Chill until firm. |
