APPLE MUFFINS 
1 c. all-purpose flour
1 c. old fashioned oatmeal
3 tbsp. sugar
4 tsp. baking powder
1 tsp. salt
1 lg. egg
1/4 c. vegetable oil
1 c. milk
1 lg. apple
1 tsp. cinnamon
1/2 tsp. nutmeg

Preheat oven to 400 degrees. Combine flour, oatmeal, sugar, baking powder and salt in a large bowl. Break 1 egg into a separate bowl and beat it slightly with a fork. Then stir in vegetable oil and milk with egg.

Pare, core and chop 1 large apple into pieces (3/4 cup). Stir in apple pieces into your dry ingredients, along with 1 teaspoon cinnamon and 1/2 teaspoon nutmeg. Then add the egg mixture. You can stir in 1/4 cup chopped walnuts or pecans.

With a large spoon mix only about 25 times, just enough to get dry ingredients wet. The dough is supposed to be lumpy. Do not overmix. Carefully spoon mixture into paper muffin cups in a muffin pan. Fill each 2/3 full. Bake for 20 minutes or until golden brown. Cool in wire rack. Makes 12 muffins.
