TOMATO CHEESE BAKE 
1 (7 oz.) pkg. favorite macaroni, cooked and drained
1 1/2 c. milk
1 c. grated Parmesan cheese
1/2 c. chopped onion
1 clove garlic, crushed
3 eggs, beaten
Salt
Ground pepper
1/2 lb. Mozzarella cheese, cut into strips
2 tomatoes, sliced
2 c. bread crumbs
2 tbsp. melted butter
Fresh parsley

Heat oven to 350 degrees. Combine macaroni, milk, half of the Parmesan cheese, onion, eggs, and seasonings. Mix well; stir in Mozzarella cheese and pour half in a greased 2 quart casserole. Top with one tomato sliced, then remaining macaroni mixture. Toss crumbs with butter. Arrange remaining tomato on top and sprinkle with crumbs. Sprinkle with 1/2 cup Parmesan cheese and bake for 20 minutes. Serve hot, garnished with parsley. Serves 6-8.
