COLE SLAW 
1 med. head cabbage
1 green pepper, diced
2 carrots, grated
Coarse salt

Shred cabbage and sprinkle coarse salt over it. Let stand for 1 hour or longer. Drain off liquid. Add one of the following dressings and chill.

MAYONNAISE DRESSING:

5 tbsp. mayonnaise
2 tbsp. lemon juice
2 tbsp. sugar
Salt and pepper to taste

Serves 8 at 94 calories each serving. If you use imitation mayonnaise, it is 55 calories each serving.

OIL-VINEGAR DRESSING:

3 tbsp. oil
1/2 c. vinegar
2 tsp. sugar
Salt & pepper to taste

Serves 8 at 61 calories each serving.
