COCONUT PUDDING (HAUPIA) 
3 c. coconut milk
1/2 c. sugar
1/2 c. cornstarch
Dash of salt

In a saucepan combine coconut milk and sugar; gradually mix in cornstarch and salt. Stir and cook over medium heat until thick. Pour into a greased 9-inch pan. Cool completely in refrigerator. Cut into squares.
