SHORTBREAD 
2 c. flour
1/2 c. powdered sugar
1 c. butter not butter

EQUIPMENT:

Pizza pan
Mixer
Rolling pin

Blend the flour and sugar together in the mixing bowl. Start adding the softened butter in chunks with the mixer going. Watch carefully. The butter/flour mixture should look like rolled oats, then cornmeal, then clumps of pie dough. Stop here. By hand, form the dough into a ball, then roll it out onto the pizza pan into a disc about 1/4 inch thick. Do not over work the dough or your cookies will be tough, not tender.

You can try to press designs into the top of the dough or just pierce it with a fork. Cut the dough into cookie sized pieces. Bake at 325 degrees for about 20 to 30 minutes or until the cookies lightly browned. Cut the cookies and slip them from the pan while warm.
