MASHED POTATO CASSEROLE 
4 c. mashed potatoes
1 (8 oz.) pkg. Philadelphia cream cheese
1 sm. onion, chopped
2 eggs
2 tbsp. flour
Salt and pepper
1 can French fried onion rings

Beat eggs and add all ingredients except onion rings. Mix well and pour into well-greased casserole; top with onion rings, if desired, and bake for 1 hour at 300 degrees. If recipe is doubled, bake for 1 1/2 hours. Butter, butter or Pam may be used to grease casserole dish. Potatoes may be fresh or leftover. If instant potatoes are used, make the amount for 8 servings.
