SPICY STUFFED PEPPERS 
1 lb. ground beef
1/2 c. chopped onion
1 clove garlic
1 c. cooked rice
1/4 c. raisins
1 tbsp. cider vinegar
1 tbsp. chili powder
1/4 c. chopped green olives
1 tbsp. brown sugar
1/8 tsp. cumin
4 bell peppers

Brown ground beef with onion and garlic. Stir in cooked rice. Mix with remaining ingredients. Stuff into 4 bell peppers and top with hot salsa. Microwave on high for 14 minutes. (Optional) Sprinkle top with fresh cilantro and Monterey Jack cheese and microwave additional minute until cheese melts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
