WHITE BEAN AND OLIVE SALAD 
1 (15 oz.) can white beans, rinsed and drained
1 c. pitted ripe olives, halved and drained
1/2 c. chopped red onion
1 c. tomatoes (1/2 lb.), seeded and diced
1/3 c. minced parsley
2 tbsp. lemon juice
1/2 tsp. basil, thyme and oregano
1/4 tsp. pepper
2 tbsp. olive oil

Combine all ingredients. Toss gently to mix. Taste and add more lemon, if desired.

Makes 6 servings, 160 calories per serving.
