CINNAMON RAISIN BISCUITS
2 1/4 cup self-rising flour*
1/4 cup sugar
2-4 T cinnamom ( We like alot)
1/2 cup of butter (1 stick)
raisins to taste
3/4 cup milk
Frosting: Confectioners (powdered) sugar, melted butter and alittle milk.

Preheat oven to 450°F for at least 15 minutes before baking.

*Note: If not using self-rising then add 1 tablespoon baking powder and 1/2 teaspoon salt. Mix flour, sugar and cinnamon. Then add cold stick of butter cut in small pieces. Use pastry cutter to make the butter fine pieces.

Now, add raisins and toss in flour mixture. Add milk and mix well. Now, put the dough on a floured counter, but do not knead it. Simply pat out with floured fingers to about 1/2-inch thickness. Do not make it too thin. Cut with a floured biscuit cutter.

Place on an ungreased cookie sheet, not touching (leaving about a 2-inch space).

Bake at 450°F (be sure oven is preheated and at temperature) for about 12-15 minutes or until light brown. Let cool completely and then frost.

These biscuits can be frozen, then just pop them in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
