SPINACH APPLE SALAD 
1/4 c. olive oil
3 tbsp. red wine vinegar
1 tsp. sugar
4 slices bacon, crisp, crumbled
1/4 c. slivered almonds, toasted
1 lb. fresh spinach, remove stems and tear in bite size pieces
1 Red Delicious apple, unpeeled, cored and chopped
2 green onions, thinly sliced

Combine olive oil, vinegar, and sugar together in a jar with a tight lid and shake well. Refrigerate to use later.

In a large bowl, combine spinach, bacon, almonds, apple pieces, and onion; toss gently to combine. Just prior to serving, shake dressing again. Pour dressing over salad and toss again. Serve immediately. Serves 4-6.
