RED BEANS AND RICE 
1 (1 lb.) pkg. dried red beans
1 lb. lean salt meat or ham bone
2 lg. onions (chopped)
3 tbsp. lard, Crisco, or bacon fat
3 tbsp. flour
1/2 tsp. hot pepper sauce
1 tsp. thyme
1/2 tsp. sage
Salt and pepper to taste

Wash beans then soak (overnight) or at least 4 hours. Place beans in water to boil. Heat fat in skillet. Add flour, cooking and stirring quickly so as not to burn. Cook until light brown.

Add onions, stir until onions are soft. Add to pot of beans along with other seasonings and meat. Boil for about 2 1/2 hours. Serve over cooked rice.
