APPLE SQUARES 
2 1/2 c. flour
1 tsp. salt
1 tbsp. sugar
1 c. Crisco shortening
1 egg yolk
Milk

FILLING:

4 or 5 c. apples, peeled and sliced
1 c. sugar
2 tbsp. cornstarch
Dash of salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 tbsp. lemon juice

GLAZE:

1 egg white
1 c. confectioners' sugar
2 tbsp. milk

Pastry dough: Sift flour, salt, and sugar into a bowl. Cut in shortening with a pastry blender. Combine egg yolk with enough milk to make 2/3 cup liquid. Add to pastry dough; mix to combine. Divide dough into two balls. Roll out one ball of dough and use to line 9 x 13 inch pan, spreading dough up sides of pan.

To prepare filling: Combine apples with sugar, cornstarch, salt, cinnamon, nutmeg, and lemon juice; mix well. Spread apple slices evenly over surface of dough. Roll out remaining dough and cover apple slices, pinching edges of top and bottom crusts together.

Beat egg white until stiff peaks form. Brush over top crust and bake in a 400 degree oven, 15 minutes. Reduce heat and then bake in 350 degree oven 40 minutes. (If using a glass baking dish, reduce temperature by 25 degrees.) Combine powdered sugar and milk. Drizzle immediately over crust after removing pan from oven. When cool, cut into squares.
