GARDEN VEGETABLE PIE 
1 pie shell
1 c. chopped celery
1/2 c. chopped onion
1/2-1 c. thinly sliced carrots
1 c. sliced squash (or 1 c. zucchini or 1/2 c. each squash & zucchini)
Add'l crust or mashed potatoes
1/2 c. grated cheese
1 c. sliced green beans
1 bunch chard or spinach, shredded
1-1 1/2 c. chopped tomatoes, canned or fresh
Mushrooms
Soy sauce or cooking sherry
Flour or cornstarch

Make or buy pie shell. Bake 5 minutes at 425 degrees. Saute as many mushrooms as you want/can afford in butter with soy sauce or cooking sherry. Reserve mushrooms. Thicken "sauce" with flour or cornstarch.

Saute the vegetables with chard or spinach added lastly. Mix in mushrooms and sauce. Mix in cheese. Arrange in pie crust. Top with another crust or mashed potatoes brushed with egg whites. Bake at 400 degrees until done 15-20 minutes.
