BERKS COUNTY POTATO DUMPLINGS 
6 potatoes
10 slices bread
Salt to taste
Pepper to taste
1 onion, grated
1 tsp. minced parsley
2 eggs, well beaten
Flour

Grate the potatoes. Soak the bread in cold water and squeeze out as much water as possible. Combine the bread, salt, pepper, onion and parsley, then add the potatoes and eggs. Mix well and form into balls. Roll in flour and drop gently into boiling salted water. Cook, covered, for 15 minutes.
