ZUCCHINI MARMALADE 
8 c. ground zucchini
8 c. sugar
2 oranges
1 (6 oz.) can frozen orange concentrate
1/2 c. lemon juice

Peel, remove pulp and grind zucchini (use food chopper or blender). Add pulp from oranges and rind after it is cut in fine slivers. Add sugar and simmer several hours in large open kettle, stirring occasionally, until it thickens. Then add lemon juice and orange concentrate. Taste and add lemon as you choose. If fresh lemon is used, slice rind and add before cooking. Put in sterilize jars and seal.
