OATMEAL - CHOCOLATE CHIP COOKIES 
1 c. butter
1 1/2 c. brown sugar
2 eggs
1 tsp. vanilla
1 1/2 c. whole wheat flour
2 1/2 c. rolled oats
2 tsp. baking soda
1 tsp. salt
1 (12 oz.) pkg. chocolate chips
1 1/2 c. chopped nuts

Cream together 1 cup butter and 1 1/2 cup brown sugar. Beat in 2 eggs and 1 teaspoon vanilla. Blend, then add 1 1/2 cups whole wheat (or all- purpose) flour, 2 1/2 cups rolled oats (regular or quick), 2 teaspoons soda, and 1 teaspoon salt. Add 1 (12 ounce) package chocolate chips and 1 1/2 cups chopped nuts (optional). Bake in a moderate oven for 12-15 minutes (350 degrees).
