JAMBALAYA 
1 1/2 c. rice
3 c. water
2 cans stewed tomatoes with peppers, undrained
1/2 lb. cajun sausage, sliced in thin medallions
1 lb. fresh shrimp, cooked, shelled & deveined
Louisiana hot sauce

Cook rice in water until full boil. Simmer 20 minutes or until tender. Add remaining ingredients and season with Louisiana hot sauce to taste. Shrimp and sausage may be cut in half for more piece of meat if desired. Heat through and serve, add more hot sauce to your serving if desired.
