PIZZELLES 
1 dozen eggs, beat until fluffy
5 sticks butter, melted
3 1/2 c. sugar
1 tsp. anise
1 tsp. lemon extract
1 tsp. vanilla extract
10 c. flour (may need up to 1 1/2 c. more)

Beat butter and sugar into eggs. Mix in spices. Mix flour in well. Keep dough soft. Drop by teaspoonfuls onto pizzelle iron. Makes about 10 dozen.
