CRUNCHY CHICKEN SALAD 
1 c. shredded carrots
1/4 c. minced onion
1/2 c. salad dressing
1 c. diced chicken (tuna or shrimp can be used)
1 tbsp. pickled relish
1 c. diced celery
1 can shoe string potatoes

Combine vegetables with dressing and relish. Let stand in refrigerator. Before serving add the chicken, shrimp or tuna and the shoe string potatoes.
