OAT BRAN MUFFINS 
2 c. Quaker Oat Bran
1/4 c. firmly packed brown sugar
2 tsp. baking powder
1/2 tsp salt
1 c. skim milk
2 egg whites, beat slightly
1/4 c. honey or molasses
2 tbsp. vegetable oil

Heat oven to 425 degrees. Combine dry ingredients. Add milk, egg and honey to oil. Mix only until moistened. Fill muffin cups almost full and bake 15 to 17 minutes or until golden brown. Makes 12 muffins. Freeze well - can warm in microwave for 20 seconds. May add 1/2 cup raisins or dates, chopped.

Since microwave ovens vary in power, you may need to adjust your cooking time.
