ZUCCHINI QUICHE 
3 c. shredded or diced zucchini (about 1 lb.)
1/2 c. diced onion
2 tbsp. chopped parsley
Dash of salt and pepper
4 slightly beaten eggs or the equivalent of Egg Beaters
2 c. Bisquick
1/2 c. Parmesan cheese
1/2 tsp. oregano
4 oz. cottage cheese or ricotta
1/4 c. oil

Mix ingredients together in a large bowl. Spray or grease a large quiche or pie plate. Pour the mixture in. Bake in preheated 350 degree oven for at least 1 hour or until brown crust forms on top. usually tastes better the next day. Serves 4 generously.

This recipe is delicious. It is a great way to use your fresh garden zucchini right now and you can also make muffins with it it. I freeze my shredded zucchini to use in this recipe.
