GRANDMA'S PINEAPPLE UPSIDE DOWN
CAKE
 
1 stick butter
1 c. brown sugar
1 med. can pineapple rings in juice
Maraschino cherries
3 eggs, separated
1 c. self-rising flour, sifted
1 c. sugar

In an iron skillet melt butter and brown sugar. Line pan with pineapple rings, placing a cherry in the middle of each ring. In a bowl beat egg yolks. Add sugar and 5 tablespoons pineapple juice. Add flour; mix well. In a separate bowl beat egg whites until stiff. Add to other ingredients and mix. Pour over fruit. Bake 45 minutes at 350 degrees.
