GRANDMA ROTH'S JAM CAKE | |
4 c. flour 2 c. sugar 1 c. butter 6 eggs 1 c. buttermilk 2 c. blackberry jam, preserves or canned or frozen berries 2 tsp. vanilla 1 tsp. each allspice, cloves, nutmeg and cinnamon Cream butter and sugar well. Add eggs. Mix well. Add jam or berries and vanilla. Sift together flour, soda and spices and add alternately with the buttermilk, mixing well after each addition. Bake in greased and floured cake pans at 325 degrees for 35 to 40 minutes or until toothpick comes out clean. Do not over bake. It should be a moist cake. This recipe will make 3 to 4 layers. I like this best using frozen berries. NOTE: If desired, 1 cup chopped nuts can be added. We helped pick many blackberries in our time to make this cake. Hope you enjoy it too. A caramel icing is good on this cake. |
