GRANDMA'S CARROT CAKE 
2 c. flour
2 c. sugar
1 c. cooking oil
4 eggs
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. pecans
3 c. carrots, grated (3 to 4 carrots)

Mix cooking oil and sugar well. Add eggs, one at a time, beat well. Add sifted flour, soda, salt, and cinnamon. Blend well. Stir in pecans and carrots. Pour in 3 layer pans and bake at 350 degrees until done. Let cool before icing.

ICING:

1 (8 oz.) pkg. cream cheese
1 box confectioners' sugar
1 stick butter
1 tsp. vanilla

Beat cream cheese and butter together. Add sugar, a little at a time. Add vanilla and beat until smooth.
