GREAT GRANDMA'S SOFT GINGER CAKE | |
2 1/2 c. sifted all-purpose flour 1 3/4 tsp. baking soda 1 tsp. ground ginger 1 tsp. ground cinnamon 1/4 tsp. ground cloves 1/4 tsp. salt 1 c. sugar 1/2 c. vegetable shortening 1 c. molasses 1 c. boiling water 2 eggs, well beaten 1. Sift together flour, soda, spices and salt and set aside for step 3. 2. Cream sugar with shortening and molasses until well blended. 3. Add sifted dry ingredients to creamed mixture alternately with boiling water, beginning and ending with dry ingredients. Stir in eggs. 4. Pour into a well-greased 13 x 9 x 2 inch baking pan and bake in a moderate oven (350 degrees) for 30 minutes or until center springs back when lightly pressed with fingertip. Cool upright in pan to room temperature. Cut in large squares and serve. |
