SCALLOPS ST. YVES 
1 mushroom, diced
1 tbsp. dry bread crumbs
Pepper to taste
1/2 tbsp. melted butter
1 scallops shell or shirred egg dish
1/2 tsp. chopped chives
Salt to taste
1 tbsp. dry white wine
6 to 8 scallops (sea scallops preferred)

Mix mushrooms, chives, bread crumbs, salt, pepper, wine, and butter together. Combine this with the scallops and fill the shell. A sprinkling of bread crumbs may be put on top of filling. Bake in preheated 350 degree oven for 20 minutes or until the scallops become gently flaky. Serves 1.
