SQUASH COOKIES 
1/3 c. butter
1/2 c. brown sugar
1 egg, well beaten
2 tbsp. honey
1 tsp. vanilla
2 c. flour (whole wheat or white)
1/2 tsp. baking soda
1 1/4 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. thick squash puree
1/2 c. raisins or chocolate chips
1/2 c. chopped nuts
2 tsp. grated orange peel, optional

Cream butter with sugar; beat in egg, honey and vanilla. Mix flour with baking soda, baking powder, cinnamon and nutmeg. Fold dry mixture into wet one. Fold in squash and mix well. Add raisins, nuts and optional orange peel. Drop by teaspoons on lightly greased cookie sheet. Bake at 350 degrees for about 15 minutes or until lightly browned. Will yield about 24.
