POLYNESIAN BARS 
2 c. chopped dates
20 oz. can unsweetened crushed pineapple
1 tbsp. vanilla

Mix together in saucepan and cook until consistency for spreading. 1 c. unsweetened coconut (optional) 1/2 c. chopped nuts 1/2 tsp. salt 1/4 c. brown sugar 1/4 c. oil 3 c. oatmeal 1 c. orange juice

Mix together very well. Prepare 9 x 12 inch baking dish with Pam. Cover with half of the oatmeal mixture. Pat down firm. Spread filling. Top with last half of oatmeal mixture. Pat down. Bake at 350 degrees for 30 to 40 minutes or until brown. Watch carefully to be sure it doesn't burn.

Option: Can substitute grated raw apple for part of the pineapple in the filling.
