POLYNESIAN BARS 
2 c. chopped pitted dates
1 (20 oz.) can crushed pineapple in juice
3 c. rolled oats
1 c. flour
8 oz. shredded unsweetened coconut
1 c. chopped pecans
1/2 tsp. salt
6 oz. unsweetened orange juice
1/4 c. water

In saucepan, mix together dates and pineapple with liquid. Cook, stirring frequently, until mixture is thick enough to spread. Set aside.

In bowl, mix oats, flour, coconut, pecans and salt. Add orange juice and water and stir until dry ingredients are moistened. Pat half of mixture over bottom of 9x13 inch baking dish. Spread date-pineapple mixture evenly over top. Pat remaining oatmeal mixture over filling. Bake at 350 degrees 30 minutes or until lightly browned. Makes 24 bars, 12 servings.
