RED CABBAGE WITH APPLES 
2 tbsp. bacon fat
2 julienne onions
4 tart apples, peeled, cored & sliced
1 tbsp. sugar
1/4 tsp. nutmeg
6 strips bacon
8-10 c. red cabbage
1/4 c. water
Salt & pepper to taste

Cook onions and bacon in fat being careful not to brown. Add cabbage and 1/4 cup water. Cover and steam for 15 minutes. Add rest of ingredients. Blend and cook on low heat for 1 1/2 hours. Serves 6.
