ESTHER'S ITALIAN CAKE 
1 ready-made pound cake
1 lb. ricotta cheese
1 fresh orange, squeezed
1 lb. pkg. bittersweet chocolate chips
1/2 stick butter

Cut pound cake into 2 or 3 strips lengthwise. Squeeze the orange juice over each layer thoroughly. Mix 1/2 pound of ricotta cheese, add 1/4 cup powdered sugar to taste. Add 1/2 cup chips ground into above mixture into Cuisinart. Spread mixture onto each layer and assemble. Adjust amount of mixture according to number of layers of cake.

In saucepan, dissolve 1 tablespoon instant coffee in 1 tablespoon hot water. Add 1/2 stick butter, melted. Add 1/2 bag of chips and melt on low burner, stir constantly and let cool until spreadable. Spread all over cake. Then refrigerate.

Before serving, leave room temperature for 1 hour, then cut with knife dipped in hot water. Yields: 8 servings.
