CHICKEN A LA EDIE 
1 whole chicken breast per person, divided, boned, skinned and pounded thin
1 whole green chili per person, with a slice of Jack cheese inside
Grated Parmesan cheese
Beaten eggs
Sweet butter
Italian seasoned bread crumbs

Roll chili with slice of Jack cheese inside chicken breast. Secure with toothpick which can be taken out later. Dip in beaten egg; then in seasoned bread crumbs and Parmesan cheese. Refrigerate for at least 20 minutes. Saute in sweet butter and brown lightly. Place in casserole and bake at 350 degrees for 35 minutes, uncovered. Serve with salsa or mushroom sauce.
