HUEVOS RANCHEROS 
2 tbsp. olive oil
2 cloves garlic
1 lg. onion
1 lg. green pepper
2 lg. tomatoes, chopped
Salt
1 tbsp. oregano
1 tsp. cumin
1 tsp. chili
6 eggs
2 tbsp. butter

Saute garlic, onions and peppers in oil until onions are transparent. Add tomatoes, oregano, cumin and chili. Cook 5 minutes. In another pan scramble 6 eggs in butter. Pour sauce over eggs.
