OLD FASHION RICE PUDDING 
2 eggs, slightly beaten
2 1/4 c. milk, scalded
1/3 c. sugar
3/4 c. cooked regular rice
1/4 c. raisins
1 tsp. vanilla
1/2 tsp. grated lemon rind
1/4 tsp. ground cinnamon
1/4 tsp. salt

Beat together eggs and milk. Stir in sugar, rice, raisins, vanilla, lemon rind and salt. Pour into greased 1 1/2 quart casserole. Sprinkle with cinnamon. Set casserole in pan of hot water (1/2 inch deep). Bake in moderate oven (350 degrees) for 45 minutes or until set around the edges. Makes 6 servings.
