VEAL PARMIGIANA 
1/3 c. grated Parmesan cheese
2 tbsp. dry bread crumbs
1 egg, slightly beaten
1 - 1 1/2 veal cutlets
2 tbsp. oil
1 med. chopped onion
1/8 tsp. salt & pepper
1/8 tsp. oregano or Italian seasoning
8 oz. can tomato sauce
1 c. shredded mozzarella cheese

Heat oven to 375 degrees. In small bowl combine Parmesan cheese and crumbs. Dip veal in egg then coat with crumb mixture. In large skillet brown veal in hot oil, place in 8" square pan. Add onion to skillet and cook until tender. Stir in salt, pepper, oregano and tomato sauce. Top pieces of veal with cheese. Pour tomato mixture over cheese, spreading to cover. Sprinkle with additional Parmesan cheese. Bake, uncovered at 375 degrees for 30 minutes.
