BANANA BREAD IN MASON JARS 
2/3 cup shortening
2 2/3 cups white sugar
4 eggs
2 cups mashed bananas
2/3 cup water
3 1/3 cups all-purpose flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
12 (1 pint) canning jars

Boil and sterilize jars. Preheat oven to 325°F. Grease the inside of the jars.

Mix shortening and sugar till fluffy. Mix eggs, mashed bananas, water, flour, baking soda, baking power, salt, cinnamon and cloves with the sugar shortening mix.

Fill jars 1/2 way and bake at 350°F for 45 minutes. Place lid on jars and seal with the band as soon as the jars are removed.

Bread will stay fresh and moist for up to a year.
