CHEESE-CAKE COOKIES 
1/3 c. lightly salted butter, softened
1/3 c. firmly packed light brown sugar
1 c. all purpose flour
1/2 c. chopped walnuts or pecans
1/2 c. granulated sugar
8 oz. pkg. cream cheese, softened
1 egg
2 tbsp. milk
1 tbsp. freshly squeezed lemon juice
1/2 tsp. vanilla extract

1. Preheat oven to 350 degrees.

2. Lightly grease 8"x8" baking pan.

3. To make crumb mixture for bottom crust and topping, cream butter with brown sugar until fluffy; cut in flour and nuts.

4. Reserve 1 cup of mixture for topping. Press remainder into bottom of prepared pan.

5. Bake 12 to 15 minutes, until lightly browned.

6. To make filling, blend granulated sugar with cream cheese until smooth. Beat in egg, milk, lemon juice and vanilla extract.

7. Spread filling over baked crust. Top with remaining crumb mixture.

8. Bake 25 minutes. Chill and cut into squares.
