SPICED APPLE CAKE 
5 lg. McIntosh apples (about 2 lbs.), peeled, cored and chopped
2 c. plus 2 tbsp. sugar
2 1/4 tsp. cinnamon
3/4 tsp. nutmeg
3 c. unbleached flour
1 tsp. salt
1/2 c. brown sugar, firmly packed
1 tbsp. double-acting baking powder
1 c. plus 2 tbsp. unsalted butter
4 lg. eggs, lightly beaten
2 1/2 tsp. vanilla
1/4 c. fresh orange juice
1/4 c. chopped walnuts (preferably black)

Combine the apples, 2 tablespoons sugar, 2 teaspoons cinnamon and 1/2 teaspoon nutmeg. Let mixture stand for 20 minutes.

Whisk together the flour and remaining 2 cups of sugar, salt and baking powder. Then make a well in the center. Whisk in the melted butter, eggs, vanilla, orange juice and whisk the batter until it combined well. Pour 1/3 of batter into a buttered 9x13 inch pan and spoon half the apple mixture over it. Repeat, pouring batter and spooning apples with the batter being the last step.

Combine the brown sugar, walnuts and softened butter, the remaining 1/4 teaspoon of cinnamon and nutmeg. Sprinkle this mixture over the batter and bake the cake in the middle of a preheated 350 degree oven for 35-40 minutes until cake is golden and tester comes out clean.
