PORK SOUVLAKI WITH PASTA AND
VEGETABLES
 
2 pork Souvlaki skewers (Greek)
1 large carrot, chopped
2 stalks celery, chopped
1 bunch broccoli, cut into bite sized pieces
2 mini bell peppers, sliced
1 medium onion, halved and sliced
1 tbsp. Vegetable oil
1 tsp. minced garlic
2 cups water
1 cup low-sodium tomato juice
2 1/4 cups uncooked rotini (I use Catelli Healthy Harvest)
1/4 tsp. cayenne pepper
3 tsp. black pepper
2 tsp. Italian seasoning (McCormick)
1 tsp. Accent food enhancer (MSG; optional)
1 tsp. chili powder
1 tsp. cornstarch
1/2 cup water

Remove the Souvlaki from the skewers and cut into bite sized pieces. Sauté in vegetable oil with garlic.

Add the carrots and celery, then broccoli, peppers, and then onions, sauté about 10 minutes.

Add 2 cups water and tomato juice and rotini then the spices, cook on medium heat about 15 minutes. Simmer for another 15 minutes or until pasta is al denté, Add cornstarch and 1/2 cup water to thicken sauce.
