CURRIED CHICKEN 
1 whole chicken cut up or 1 pkg. of your favorite parts
1 lg. onion, diced
1 lg. pepper, diced
2 cloves garlic, diced or 2 tsp. garlic powder
1 can whole peeled tomatoes, crushed or cut up
1 can curry powder
1/2-3; 4 c. vegetable oil
4 sm. white potatoes, peeled and diced (optional)
Salt and pepper to taste (optional)

In a large skillet or pot, heat vegetable oil. Add diced onion and pepper. Let cook until half done. Add chicken; let simmer for 1/2 hour. Add curry powder and chopped garlic; stir. Let simmer for another 1/2 hour. Add can of tomatoes, diced potatoes (optional), salt and pepper (optional).

Let all ingredients cook slowly on medium low, or low heat; stir often until chicken is tender and potatoes are well done. If potatoes are not used, curried chicken can be served over white rice. Serve with salad or your favorite vegetables.
