ORANGE POUND CAKE | |
9 tbsp. butter, room temperature 2 eggs 1 tsp. baking powder 1 tsp. grated orange rind 1/2 c. sugar 1 c. flour 1/4 c. orange juice Grease a loaf pan. Cut waxed paper to fit bottom of pan. Put in place and butter it. Beat butter and sugar at medium speed for 2 minutes. Add eggs and beat for 5 minutes. (At this point batter will look curdled, but it will smooth out when flour is added). Sift flour and baking powder. Reduce speed to low, add flour, little by little until it is blended. Beat in orange juice and grated orange rind. Pour batter into pan, and bake for 40 minutes in preheated oven at 400 degrees on middle shelf. Cover loosely with foil. Remove from oven. Turn pan upside down. |
